What the certificate covers

The Galley Academy training certificate documents that you have completed Quarterdeck's intensive culinary and hospitality course: knife skills, mise en place, service management, stocks and sauces, food safety and allergens, and cooking three full services a day in a professional galley environment.

There is no formal external body that certifies culinary training at this level in the way that sailing has the RYA or STCW. That means a Quarterdeck training certificate is the credential. Quarterdeck has trained a large number of students who now work or have worked as professional hosts and galley cooks around the world. That track record is what gives the certificate its value.

What about the instructor assessment?

Separately from the training certificate, every student who completes the week receives an individual debrief on Friday. If Host Academy is your next step, your instructor will give you an honest readiness assessment. This assessment travels with your Host Academy application and carries real weight. A strong assessment from a Galley Academy instructor is meaningful evidence of your capability.
