Quick answer. If you are an EU, EEA or Swiss citizen you can work in all three, with no permit in France and Austria and (after registering) in Switzerland. Everyone else, including UK passport holders, needs a work permit in all three, and Switzerland runs strict quotas, so start early.
France (in the EU)
EU, EEA and Swiss citizens work with no permit. Everyone else needs a work visa arranged before starting; use the official France-Visas wizard to see what applies to your nationality.
Austria (in the EU)
EU, EEA and Swiss citizens work with no permit. Everyone else needs an Austrian work and residence permit (for example a seasonal permit or the Red-White-Red Card), which the employer leads. Seasonal tourism places are limited, so apply early.
Switzerland (not in the EU)
Switzerland is not in the EU, but it has a free-movement agreement with the EU and EFTA. EU, EEA and Swiss citizens can work there after registering. Non-EU nationals need a Swiss work permit, and Switzerland caps these with annual quotas, so plan a long way ahead for a chalet season.
